Gluten Free & Dairy Free Pandan Muffin Recipe

If you love Asian desserts or coconut flavored treats, you will love these muffins. They are incredibly soft and moist - my friends couldn’t tell that they are gluten free! 


They are filled with coconut flavor and the pandan taste is just the right amount.





Recipe: 


Preparation Time 15 minutes 

Cooking Time 20 minutes 

Total Time 30 minutes 


Makes 12 regular-sized muffins 


Ingredients

1 cup gluten-free all-purpose flour

½ cup coconut flour

2 teaspoons baking powder

1 teaspoon baking soda

1 tsp xanthan gum (if your GF all purpose flour doesn’t include it)

1 cup sugar

½ teaspoon salt

3/4 cups unsweetened shredded coconut (optional)

2 large eggs

1/3 cup coconut oil melted

1 ¾ cup coconut milk

½ tsp teaspoon pandan paste 

Instructions 
  1. Preheat the oven to 177° C.

  2. Line your muffin tray with muffin liners.

  3. In a large bowl, combine the gluten free flour, coconut flour, baking powder, baking soda, xanthan gum sugar, salt, and the shredded coconut.

  4. In a medium bowl, whisk together the eggs, oil, coconut milk, and vanilla. Add the egg mixture to the flour mixture, gently stirring just until combined.

  5. Scoop batter into the prepared muffin tins, and sprinkle muffins with the remaining coconut. Bake until a toothpick inserted into the center is clean, about 20-22 minutes.
