Chocolate Cream Cheese Bundt Cake



Ingredients:


Cream cheese filling:


200g cream cheese

50g butter

50g sugar

1 egg

50g flour


Chocolate batter:


120g butter

150g sugar

3 eggs

110g flour

40g cocoa powder

1/2 tsp baking powder

1/2 tsp baking soda

50 ml milk

Method:


  1. For the cream cheese filling, using a cake mixer, mix together butter, cream cheese and sugar for about 2 minutes until creamy. 

  2. Add an egg and mix till combined 

  3. Using a spatula, fold in flour and don’t overmix. Set aside. 

  4. For the chocolate batter, in a bowl, mix the flour, cocoa powder, baking soda, baking powder, salt, Set aside. 

  5. Mix together butter and sugar for about 2 minutes until creamy. Add the eggs and mix till combined. 

  6. Using a spatula, fold in flour that’s already been mixed with cocoa powder, baking powder and baking soda, typically for 10-30 seconds.

  7. Add milk and mix with a spatula. 

  8.  Pour 2/3 of the chocolate batter to a pre-greased bundt pan, spreading evenly to cover the base of the pan. 

  9. Then, layer it with the cream cheese filling, at every step, make sure to spread it evenly. 

  10. Finally, add the remaining chocolate batter. 

  11. Bake at 177 degrees Celcius for around 40 minutes or until a toothpick inserted into the cake comes out clean with just a couple lightly moist crumbs.

  12. Once done, remove from the oven and allow to cool for 1 hours inside the pan. Then, invert the slightly cooled bundt cake onto a wire rack or serving dish.

  13. Garnish with optional toppings, then slice and serve.
